I enjoy playing around with the crust when making pies so that the dessert looks extra remarkable. Christmas tree cupcake wrappers and some bright red jam or jelly are all you need to make this. On top, you might even sprinkle coloured sugar.

For fruit filling:

Over the dried fruit, pour boiling water. Drain after five minutes of standing. 3/4 cup sugar, flour, lemon peel, cinnamon, and salt should all be combined in a sizable bowl. Add the apples and the drained fruit, then set aside.

On a lightly floured surface, roll 1 dough disk from center to edges into a 12-inch circle. To transfer the pastry, wrap it around the rolling pin; unroll it into a 9-inch pie plate. Ease pastry into pie plate being careful not to stretch pastry. Transfer the fruit filling to the pastry-lined pie plate. Trim pastry to edge of pie plate—brush edge with a bit of water.

The remaining dough ball is rolled into a circle with a diameter of about 12 inches. Create slits to let steam out. Place the remaining pastry on top of the filling and trim it to extend 1/2 inch past the plate's edge. Subtly fold the top pastry over the bottom. As desired, crimp the edge. Bake in a 375-degree F oven for 35 minutes. Remove foil. Bake for 25 to 35 minutes or until the top is golden and the filling is bubbly. Cool on a wire rack. Makes 8 servings.

Note
If you'd like, you can replace one 15-ounce packet of rolled, chilled, unbaked pie crust in its place (2 crusts). Carefully press 1 pie crust into the pie plate without stretching the dough. Put the fruit filling on the pie plate with the pastry lining. Apply a little water to the edge. Add a second pastry, then carry on as before.
