Salmon and sweet potato peri-peri fishcakes
Set the oven to 200C for heating. Bake sweet potatoes for 30 minutes, or until they are soft. Slice in half horizontally, then let cool. After skinning, mash.
Step#2Place salmon on a lined baking tray, pop it in the oven and cook for 10-12 minutes.
Step#3Meanwhile, make peri-yogurt by combining the full-fat Greek yogurt with peri-peri sauce.
Salmon should be flaked, then sweet potato should be combined. Shape into 4 fishcakes after combining with peri-peri sauce and coriander.
Step#5Coat in crushed potato chips (make sure you really press them on).
Cook fishcakes on a greased baking sheet for 15-20 minutes, flipping once. Serve with chips or on top of a side salad.
