Sweet Potato & Black Bean Chili Recipe

This simple vegetarian chili is packed with black beans and sweet potatoes, so make a double recipe and store it.

  1. In a Dutch oven, heat the oil over medium-high heat. Cook, stirring frequently, the sweet potato and onion until the onion starts to soften, about 4 minutes. Stirring continuously, sauté the garlic, chili powder, cumin, chipotle, and salt for 30 seconds. Simmer after adding water. Cook the sweet potato for 10 to 12 minutes, with the lid on, lowering the heat to maintain a gentle simmer.

  2. Produce heat to high, add beans, tomatoes, and lime juice, and simmer while stirring frequently. Reduce heat and simmer for about five minutes, or until greatly reduced. Once the heat is off, add the cilantro.
