Over a pot of simmering water, place the chocolate and cream in a heatproof dish, making sure the bowl doesn't touch the water. Stir the mixture with a metal spoon until it has melted and become smooth. If using vanilla, stir it in. Place aside to gently cool.

Add the pistachios and cranberries by mixing. Stir to combine, and chill for around 3 hours, or until stiff enough to roll into balls (the mixture will still be a bit sticky).

Put the coconut in a small bowl. Make balls out of the mixture using level tablespoons, then coat them in coconut. Place in a sealed bag and arrange in a single layer. Refrigerate until ready to serve.
